Parmigiano-Reggiano is an Italian hard, granular cheese produced from cow's milk and aged at least 12 months. It is named after the producing areas, the provinces of Parma, Reggio Emilia, the part of Bologna west of the Reno, and Modena; and the part of Mantua on the right/south bank of the Po. It is an expensive cheese because It all comes back to specific bacteria. These good bacteria only grow in this area of the world, making it physically impossible to create this cheese in its true form anywhere else. There are only 329 dairies in the world that can make this cheese, which helps add to the price. One of the best ones is the one that Ambrosi company offers.
